CSA - Week 1 - Organic Spinach and Collards for Dinner

Today marked my first pick up of this season's twenty weekly harvest boxes through the Growing Whatcom Community Supported Agriculture (CSA) project from the farm stand on Railroad Avenue in downtown Bellingham.
Stuffed full of fresh produce from Whatcom County's local organic farmers, I am delighted to be able to participate in this program again this year and so very excited about the wonderful selection of produce I received in this first harvest box.

Today's harvest included fresh basil and the edible flower, calendula.
Plenty of kale.
Mustard greens.
Spinach.
Radishes.
Collards.
Romaine.
And lots of spring salad mix.

Included in my dinner menu tonight was a tossed romaine salad and a dish made of fresh spinach and collards gently sauteed in a teaspoon of extra virgin olive oil with one garlic clove, a little grated fresh ginger root and just a sprinkle of calendula petals added. Except for the garlic and fresh ginger root which I already had on hand, all from this week's generous harvest box!
Yum!!!!! Absolutely delicious, and so very fresh!
